BBQ Chicken Pizza with Caramelized Onions and Serranos

Last night we made a simple BBQ Chicken Pizza.  By starting with a super-thin frozen crust we saved a lot of prep time (we discussed making our own crust, but laziness won out).  So we splurged and bought some very good mozzarella.

My boyfriend rubbed the chicken with a little bit of olive oil, salt, pepper and some chile powder before grilling it.  Meanwhile, I caramelized about 1/2 an onion in our cast iron skillet, sliced 2 serranos and shredded the mozzarella. 

After pre-heating the pizza stone we were ready for assembly.  We brushed both sides of the pizza crust with olive oil and then spread a thin layer of spicy BBQ Sauce everywhere but the edges.  Next we added the mozzarella … not too much!  That was topped with the caramelized onions, grilled chicken and serranos.  We placed the pizza on our stone and heard a nice sizzle as the cool crust responded to the heat.  And into the oven it went!

When the pizza was ready we were both excited!  The BBQ Sauce was bubbling, the crust was golden brown and the smell was torturing my growling stomach.  And the taste … incredible!  This was the best BBQ Chicken Pizza I’ve ever eaten.  The crust was so perfect – super crispy on the edges and just barely chewy in the middle.  The serranos provided a nice bit of heat and the smoky, grilled chicken combined with the caramelized onions and BBQ Sauce was pure heaven.

It’s a shame that we didn’t take any pictures, but the Bulls were playing and we were busy cheering them on.

    • My favorite BBQ Sauces are made by Mild to Wild Pepper & Herb Company. They have a Smokin’ Chipotle Sauce and a Fiery Hot Habanero Sauce that make my taste buds sing!

      However, for this pizza we used Stubb’s Spicy BBQ Sauce (which is pretty tasty!). The other brand isn’t available in stores so we use it sparingly and lovingly!
